Tiranga Pulav is a patriotic and visually stunning dish inspired by the colours of the Indian flag, representing unity and diversity. This vibrant and appetizing pulav consists of three distinct layers: Tomato rice, Curd Rice, and Spinach Pulao.

Ingredients

  • 1 1/2 Nickmics rice
  • 2 Tomatoes, onions finely chopped
  • 1/2 cup palak / spinach pureed
  • 1/2 curd
  • 1 tsp ginger-garlic paste
  • Red chilli powder to taste
  • Few peanuts
  • Mustard seeds, jeera seeds, coriander-jeera powder
  • Curry leaves, dry red chillis
  • Coriander leaves chopped
  • Salt to taste
  • Hing as required

Tomato Rice Recipe

  • Heat oil in a pan and add jeera seeds. Let them crackle, and add hing & chopped tomatoes.
  • Cook the tomatoes till mushy, add ginger-garlic paste & mix well.
  • Add red chilli powder, coriander & jeera powder. Mix well. Let it cook for a minute.
  • Add washed Nickmics rice. Add water, salt. Let it cook.
  • Once cooked add little ghee.

Curd Rice Recipe

  • In a bowl take cooled cooked Nickmics rice.
  • Add curd & salt. Mix well.
  • In a tadka pan heat oil.
  • Add mustard seed, hing, curry leaves & peanuts.
  • Pour this tadka on curd rice & mix well.

Palak Rice Recipe

  • Boil palak/spinach. Cook & puree it.
  • Heat oil in a pan. Add cumin seeds & Hing. Add 1/2 chopped onion & saute till onions get translucent.
  • Add red chilli powder, coriander powder, cumin powder, a pinch of black pepper powder, ginger – garlic paste & mix well.
  • Adjust the masalas as per taste.
  • Cook it for 5-6 minutes.
  • Add washed Nickmics rice. Add water & salt. Mix well & let it cook.
  • Once cooked add little ghee & mix well.
