Dates & Walnut Cake Recipe
Dates are high in several nutrients, fibre, & antioxidants and provide a lot of health benefits. Walnuts similarly have a great source of important nutrients & healthy fats. Combining these 2 together provides a healthy combination & variety in serving.
Ingredients
- 1 cup Nickmics dates
- 3/4 Nickmics roughly chopped walnuts
- 1/2 cup melted butter
- 1/2 cup condensed milk
- 1 tsp vanilla essence
- 1 1/4 cups all-purpose flour (maida)
- 1/2 tsp baking powder
- 1 tsp baking soda
Recipe
- Soak Nickmics wet dates in a bowl of hot water for 30 minutes. Drain the water. Mash the dates a little & keep them wide.
- Mix butter & condensed milk in a mixing bowl & beat it with a spatula or electric beater till smooth.
- In the same bowl mix flour (maida), baking powder, and baking soda & mix well with a spatula.
- Add the mashed dates, chopped walnut, and vanilla essence to the batter & mix well.
- Grease the baking tin & dust it with flour & pour the cake batter.
- Sprinkle some pieces of walnut & bake the cake in the oven at 1800C (3600F) for 1 hour.
- Poke with a knife. If the knife comes to clean your cake is ready.
- Cool the cake & serve.
